Cabernet Franc
It is only recently that Cabernet Franc has come into its own as a pure varietal wine. It is usually a less tannic and acidic wine with a lighter body and colour. It is however, known to be more aromatic and herbaceous than most reds. It is often blended with Cabernet Sauvignon, Merlot and other varietals where it helps to heighten the quality, lending finesse and elegance to blends. Hints of black pepper and notes of raspberry and strawberry.
Suggested Pairings - pork, sausage, veal and hearty fish dishes.
Aging - 9 to 12 months.
